    Never before have I thought of making scotch eggs. Matter of fact, I haven’t eaten them for quite a few years now. Almost a decade, sheesh. The last time I had them were from Mr. Biggs in Nigeria!

    So, what possessed me to try these out is beyond me, but once the idea got a hold of me, I just had to try it. Then came the problem of figuring out what kind of sausage to use.     I usually have some odd ends and bits laying around in the kitchen. Most of these are coming to the end of their lifespan (in my kitchen anyways) and if I can’t think of something to make them into, they end up in the garbage.

    This is the story of two potatoes I bought a while ago; one regular potato and one sweet potato. My intention when I bought these was to make steak and potatoes. The steak I made, but the potatoes I decided against, no particular reason. For directions & more, keep reading!

    Spinach Omelette

    This is totally a first attempt. I’ve never had a spinach omelet before, neither have I had the urge to make one prior to this morning. I almost ordered breakfast and while looking through the menu, their Mediterranean omelet caught my eye; theirs has fresh spinach, tomatoes and feta cheese (along with the eggs of course). I had the eggs, spinach and tomatoes, but was lacking feta cheese as I had only American. For directions & more, keep reading!
