I struggled with a title on this one…couldn’t decide whether to call it ‘Skewered Gizzards,’ or ‘Skewered Peppered Gizzards!’ Then came the issue of gizzards or gizzard, lol, issues I tell you. Finally settled on Peppered Gizzards, and this recipe, is a slight variation of the original Nigerian version.
It’s a tad time consuming but well worth it! Now, I know gizzards are not everyone’s cup of tea, but for gizzard substitutes, skip to the ‘notes’ section at the very end (*1).
