Sauteed Green Beans with Walnuts

January 20, 2010 | 2 Comments

This should probably be called ‘Boiled Green Beans’ seeing as I actually didn’t saute them, but boiled green beans just sounds so off, no? However, you can easily saute the beans after boiling, I’ll state how at the end of the recipe, note ingredients with the asterisk/star, so this will be like a two-in-one recipe, kinda…

This is a really simple recipe, takes almost no time at all and is healthy to boot! For directions & more, keep reading!

Green Smoothies

August 13, 2009 | 8 Comments

For a while now, I’ve been wanting to make a green smoothie after reading about all its health benefits. Green smoothies are basically just a way to have your daily intake of fruits and veggies all in one go. Not everyone eats a substantial amount of fruits and veggies everyday and in my effort to eat healthier, I started researching green smoothies and supplements.

It’s not enough to just take a multivitamin, a few fruits, the occasional veggie and call it a day. The body needs more than that to rid it of all the toxins. It’s especially important to do what you can to be healthy in a society inundated with processed foods. It’s a good way to cleanse/detox your body while replenishing it with nature made vitamins! Summer Citrus Fruit Salad

April 26, 2009 | 6 Comments

I’d been wanting to make a fruit salad for a while now and decided now would be the best time to do so, especially with the weather getting warmer.

Technically, pineapples don’t fall under citrus fruits, but this fruit salad is simply a combination of pineapples, grapefruit and oranges. What better way to load up on your vitamin C! For directions & more, keep reading!

Rich Salad… the Nigerian Way

March 8, 2009 | 46 Comments

There are numerous ways to make a salad, some tasty, some uh, not so much. Personally, I’m not a fan of just lettuce, tomatoes and chicken. This way, as far as I’m aware, is the way some Nigerians make salads, maybe with some additions and subtractions (some add macaroni or corned beef among other things). I learned this version from my dearest mother! This is how we make it on those occasions that call for salads.

This is a much tastier version in my opinion, and the best part, still healthy. Super yummy… For directions & more, keep reading!

Baked Chicken Drumsticks & Veggies

February 24, 2009 | 6 Comments

After a spate of not so healthy eating and cooking, I decided to veg out… a bit. Whenever I buy chicken from regular grocery stores (not the African store), I usually bake them, sometimes I’ll boil and fry them, but this time I baked them. I should’ve peeled the skin off, but I was too tired to do all the extra prepping. For directions & more, keep reading!
