    Chicken Adobo: A Filipino Creation

    Adobo Chicken is a Filipino dish that is slowly cooked, with soy sauce and vinegar being the main ingredients, along with a host of other spices. It is served over white rice.

    Inspired by Jensmakeupbag, I decided to try my hands at this. I believe this would be my first attempt at making an Asian meal. She didn’t use specific measurements, but I did some research because I wasn’t too sure what the soy sauce to vinegar ratio should be. For directions & more, keep reading!

    I made this last week, but contemplated posting because I thought the above pic didn’t do it justice and of course, because I left it in a tad too long. I was going to make it again, but ah, the beauty that is laziness sometimes gets the best of me!

    Coconut Fruit Cake

    There was a birthday in the family today and I decided to bake a cake. Seeing as I don’t do much baking, I had to call my dearest mother, the baker, to give me her recipe. In my opinion, she makes the best cakes and even though I’m not a huge cake person, hers are about the only cakes that I will eat.

    Spinach Omelette

    This is totally a first attempt. I’ve never had a spinach omelet before, neither have I had the urge to make one prior to this morning. I almost ordered breakfast and while looking through the menu, their Mediterranean omelet caught my eye; theirs has fresh spinach, tomatoes and feta cheese (along with the eggs of course).
