I’m not a big pork eater, but every now and then I do love my rib tips and pork chops. I bought a pack the other day and decided to try something different other than the usual suspects of salt and pepper as seasonings.

I was inspired to make this dish from the Food Network Magazine (if you haven’t subscribed already, what are you waiting for?!). It was actually an ad for The Other White Meat, in other words, pork. (Apparently, pork loin is as healthy as chicken breast.)
While I didn’t go the route of using the pork, the idea to make this came from that ad. The actual idea for the quesadillas came from Mission Flour Tortillas (Caseras). On the back of each Mission tortilla package is usually a recipe of some sort, and on the one I got, the above was the recipe featured. For directions & more, keep reading!
