Never before have I thought of making scotch eggs. Matter of fact, I haven’t eaten them for quite a few years now. Almost a decade, sheesh. The last time I had them were from Mr. Biggs in Nigeria!

I’m not sure what the English name would be for ‘Ojojo,’ but what I do know is that it is grated water yam to which onions and spices are added. It’s kinda like akara (fried bean cake) or mosa.
It’s pretty easy to make; the downside, it’s deep fried. Although I’m sure it can be baked as well, though it might take longer before it browns. It’s a once in blue moon snack, so indulge, will you?! For directions & more, keep reading!

I was inspired to make this dish from the Food Network Magazine (if you haven’t subscribed already, what are you waiting for?!). It was actually an ad for The Other White Meat, in other words, pork. (Apparently, pork loin is as healthy as chicken breast.)
While I didn’t go the route of using the pork, the idea to make this came from that ad. The actual idea for the quesadillas came from Mission Flour Tortillas (Caseras). So it’s back to chicken. I think I cook chicken so much simply because the regular store bought chicken takes way less time to cook as opposed to the Nigerian chicken, which takes forever and a day to get soft!
