    I struggled with a title on this one…couldn’t decide whether to call it ‘Skewered Gizzards,’ or ‘Skewered Peppered Gizzards!’ Then came the issue of gizzards or gizzard, lol, issues I tell you. Finally settled on Peppered Gizzards, and this recipe, is a slight variation of the original Nigerian version.

    It’s a tad time consuming but well worth it! Now, I know gizzards are not everyone’s cup of tea, but for gizzard substitutes, skip to the ‘notes’ section at the very end (*1).     Stick meat is a Nigerian finger food/quick snack or kpanumo (pop in your mouth real quick type of food). It’s very similar to kebabs, the main difference would be the size since stick meat is cubed meat on toothpicks, not the long sticks kebabs come on. Basically, you can call them miniature kebabs.

    I remember the last time I made stick meat was in high school for some event we were having and it was done at a friends home. Now, what I don’t recall is if it had small slices of onions or tomatoes on it. Since I couldn’t remember that, I just kept it simple and mixed it in some fried stew instead.
