Cupcake Ingredients: Baking Powder and Baking Soda

Baking powder and baking soda act as rising agents in baking recipes. Both agents usually come with an expiration date and it is often recommended that they be used up well before expiration. If you keep and use them after they expire, they will not be as effective, if at all, as they should be.
If you don’t have baking powder, you can substitute if for 1/2 tsp of baking soda and 1/2 tsp of cream of tartar. Also, you can test baking powder by adding a small amount to hot water, if you notice it bubbling, it means the baking powder is good to go. If it doesn’t, that just means you’ll have to substitute or purchase some more.
