Baked Sweet Potato Chunks

I'm back! Hopefully, *fingers crossed here*, I won't be gone so long again.
I love sweet potatoes, I can eat them as fries, mashed or baked. I bought some to go with pork chops and decided to bake them in a foil wrapper along with some seasonings. It was a different take that turned out oh so amazing.

To make sweet potato chunks, here's what you'll need:

1 large sweet potato
1/2 cup olive oil
1/2 tsp dried Basil
1/2 tsp Kosher salt
1/2 tsp dried red pepper
4 crushed garlic cloves

Wash and peel sweet potato
Pre-heat oven to 350 degrees
Rinse and cut into chunks, add to a large bowl
Drizzle olive oil and spices (salt included)
Cover bowl and shake thoroughly or use your hands to mix together
Tear off a long, rectangular sheet of foil
Shiny side up, layer potatoes on foil

Press edges together in a mock-seal



Let bake for 1 hour 15 mins till fork-tender
Remove from oven, let sit 5 mins before opening foil
*when opening foil, be careful of the steam that escapes*
Open foil and be enveloped in the aroma that escapes ;~)
Transfer to plate or serve in foil as a side dish

Voila!

Not a fan of Basil, substitute for Oregano, Parsley and even Cilantro. I absolutely love Cilantro, but I would use fresh sprigs and chop it up. For the Parsley and Oregano, you can also use them dried or fresh, totally up to you.

You don't have to put the foil wrap on a baking tin, you just have to put it on the middle oven rack and let bake. The foil itself does not get hot, so don't worry about getting your fingers burnt. Don't believe me, try it and see.

Not a fan of sweet potatoes, regular potatoes can also be used and you know what, you could probably do this with yams too, not the canned type, I mean the ones you get from the African store.
